Weekly Dinner Plan #11

1) Stuffed Zucchini:

Something like this but I plan to add some ground bison I've had my eye on.



2) Tomato Soup with Cheese Toasties courtesy of Bon Appetit plus they totally sold me on their 10 minute Nutella Pudding.





3) Fried Chicken Thighs with Leeks and Fingerling Potatoes, again, by BA



4) Hash with "poached" eggs on top

Sautee 1 onion and maybe a couple cloves of garlic in olive oil
Add diced/cubed mix of about 3 lbs of potatoes and yams
Add salt and pepper
Cover to let the steam help cook the potatoes
Add some chopped pre-cooked sausage if you like
Add shredded brussels sprouts at some point
When it is basically all cooked to satisfaction, crack 4-8 eggs on top
Cover again to help those eggs cook a bit

My family prefers runny eggs, but you can cook a bit longer to make them solid.

We like this with a good chive sour cream or mayo mix to dollop on top.

5) Meatball and Butternut Squash soup, 'cause that's what I have already on hand for tonight before my groceries get here. I will loosely follow this recipe.




6) Take-out yo.
