zucchini cakes- let the squashing begin

shred three zucchini and three large carrots
dice a large red onion
toss with 8 oz greek yogurt
2 tbsp wheat germ
2 tbsp flax powder
1/2 cup of bisquick-type concoction
1 cup shredded cheddar cheese
season with: corriander, salt, pepper, garlic powder

pan fry in olive oil, coconut oil, safflower oil, etc.

dollup yogurt, sour cream, apple sauce on top.

husband claims these handle hot sauce quite well.  i will never know.
