Sunday: Sweet Potato and brussel sprout hash with eggs on top
Monday: Shrimp and brown rice/quinoa stirfry
Tuesday: Chili and corn bread
Wednesday: Pizza take-out
Thursday: Roasted whole chicken with roasted carrots and beets tossed with olive oil and goat cheese
Friday: Sauteed halibut and green beans
Monday: Shrimp and brown rice/quinoa stirfry

Weekly Dinner Plan #4
Sunday: Spaghetti alla Carbonara
Monday: Sweet Potato and Goat Cheese Mash topped with caramelized onions, Brussels Sprouts with Bacon (that's right two days in a row)
Tuesday: Shepherds Pie (frozen from when I made SP three weeks ago and did a double batch)
Wednesday: Cottage Cheese Pancakes and breakfast sausage
Thursday: Pasta Marinara, Salad with "greens dressing" (recipe to come)
Friday: Dinner out :)
Saturday: Steak, Zucchini and Corn Tortitas

Week Dinner Plan: #2
Sunday: Grilled steak, salad with a poached yolk on top, roasted rosemary potatoes, and BEER!
Monday: Cream of potato soup, broccoli
Tuesday: Spaghetti with meat sauce
Wednesday: Brussel sprout and sweet potato hash with pached eggs on top
Thursday: Pizza (make or order, yes this is a very special culinary trick, I know)
Friday: Pasta tossed with olive oil, salt and pepper, veggies and goat cheese

Savory Sweet Potato Soup
Roast:
2 onions, roughly chopped
6 sweet potatoes, peeled and chopped
drizzle generously with olive oil, salt and pepper
Food processor:
Roasted onions and potatoes and any remaining oil, 1 qt vegetable broth, teensy bit of cayenne
heat on low in large pot, add a touch of cream if you like, salt and pepper more to taste.
Serve with a dollop of greek yogurt, a few piece of green onion cut length-wise and a sprinkle of dukkah.

I am frequently at a loss for dinner ideas. However I have a no-fail solution that works when I actually put it in to action. My weekly meal plans provide me with a week of stress-free meal prep. If I could pull these plans together every week I would be a happier person.
So I've decided to trap my meal plans here for my personal reference and for yours if you need some ideas for your meal plan or just for dinner tonight. I am not claiming these are perfect nutritional packages of whole organic raw vegan paleo health bombs, but they're ok.
So here is my first one, I'll put them up as I make more:

M - Sweet potato soup, warm crusty bread and butter, salad
T - Marinated curry chicken (Trader Joes), pea pancakes (Bon Appetit)
W- Panfried lentil cakes over bed of lettuce with yogurt sauce
Th- Crispy fried rice with carrots, peas, bacon, eggs
F- Chili and cornbread
Sat- Husband plans to smoke some enormous quantity of red meat.
